Butterscotch Walnut Banana Bread

I LOVE banana breads. They are one of my favorite things to bake and to eat. We had some over-ripe bananas I needed to use this weekend and so I set out to bake a banana bread. I always like to try new things so I looked in our pantry to see what fun things we had that I could mix in. This weekend I found walnuts and butterscotch chips - two of my favorite baking ingredients.


I am obsessed with the recipe I used. I modified it off of this recipe that I found on Pinterest. I made it gluten free and used less normal butter and sugar to make it a little more WW friendly (This recipe is 10 points... not my lowest point baked good, but well. worth it!). After baking it I have two recommendations of things I would change from how I did it:

  1. Use the I Can't Believe It's Not Butter baking sticks, not the spread (I only had the spread so I used it, but next time I'd seek out the ones actually made for baking).

  2. If you are using a butter substitute, up the bake time by at least 10 minutes (I ended up having to toss the center piece because it was not baked well).


Recipe (Serves 10):


Ingredients:

  • 3 Ripe Bananas (mashed)

  • 1/4 Cup I Can't Believe it's Not Butter Spread

  • 1/4 Cup Butter (softened)

  • 5/8 Cup Stevia

  • 1/8 Cup Sugar

  • 2 Eggs (lightly beaten)

  • 1/2 Tsp Vanilla Extract

  • 1 1/2 Cup Gluten Free Flour

  • 1/2 Tsp Salt

  • 1 Tsp Baking Soda

  • 1/2 Cup Walnuts

  • 1/2 Cup Butterscotch Chips



Instructions:


Preheat the oven to 350 degrees. Combine ingredients in a mixing bowl adding the chips and nuts last. Put in greased bread pan. Bake for 60 minutes, or until a knife comes out clean from the center. Cool and serve!
