Homemade Lemon Bars

One of my favorite desserts to make ever is my Great-Grandma McCourt's Lemon Bars. It was one of the first things I learned how to bake that wasn't chocolate chip cookies or box mix. Over the years the responsibility of being the lemon bar baker has passed down to me and all of our family and friends who love the lemon bars agree, mine are the best... even though they are the exact same as the ones my mom made, and my grandma and my great-grandma before her. The recipe has evolved a little over the years and I make them three different ways - traditional, gluten free, and low(er) My WW Point.



Traditional and Gluten Free (substitute the flour) [9 MyWW Points for 1/16 of pan]


Crust

1/2 Cup Softened Butter

1 Cup Flour (use 1-to-1 gluten free flour for GF recipe!)

1/4 Cup Powdered. Sugar

Dash of Salt


Mix and pat into 9x9 pan. Bake at 350 degrees for 15 minutes to 20 minutes.




Filling

2 Eggs

2 Tablespoons Lemon Juice

1 Cup Sugar

2 Tablespoons Flour (use 1-to-1 gluten free flour for GF recipe!)

1/2 Teaspoon Baking Powder


Mix. and pour over baked crust. Bake for 25 minutes at 350 degrees.



Icing

1 Cup Powdered Sugar

3 Tablespoons Lemon Juice

1/8 Cup Softened Butter


Mix together and frost cooled lemon bars.




Low(er) MyWW Point Recipe (7 MyWW Points for 1/16 of pan)


Crust

1/2 Cup Softened Butter

1 Cup Gluten Free Flour

1/4 Cup Powdered. Sugar

Dash of Salt


Mix and pat into 9x9 pan. Bake at 350 degrees for 15 minutes to 20 minutes.



Filling

2 Eggs

2 Tablespoons Lemon Juice

1/4 Cup Sugar

3/4 Cup Stevia (would only be 6 points if you used all Stevia, but I haven't tested that)

2 Tablespoons Gluten Free Flour

1/2 Teaspoon Baking Powder


Mix. and pour over baked crust. Bake for 25 minutes at 350 degrees.



Icing

1 Cup Powdered Sugar

3 Tablespoons Lemon Juice

1/8 Cup Softened Butter


Mix together and frost cooled lemon bars.
