Okay, call me gross all you want, but this girl LOVES meatloaf! Like so much. When I was a kid I definitely was like "ewwww that's gross" like every other picky, whiny child, but I grew up to appreciate the delicious block of ground meat, breadcrumbs and seasoning smothered in ketchup served over (my childhood favorite) mashed potatoes!
So maybe that wasn't the most appealing way to describe meatloaf, but either way I love the stuff. A few weeks ago I set out on a mission make a meatloaf that would make my 25-year-old, MyWW loving self enjoy meatloaf again. This recipe was incredible y'all and made my house smell good all night! INGREDIENTS:
LOAF:
-1 pound ultra lean ground turkey breast
-1 cup Gluten Free bread crumbs
-1/2 cup onion
-1/2 cup almond milk
-1 egg
-1 tablespoon worcestershire sauce
-2 tablespoons no sugar added ketchup
-3/4 teaspoon salt
-1/2 teaspoon garlic powder
-1/4 teaspoon pepper
TOPPING:
-1/4 cup no sugar added ketchup
DIRECTIONS:
Preheat the oven to 350 degrees fahrenheit.
Combine all ingredients in a mixing bowl. Put in a loaf pan and spread topping ketchup on the top.
Bake for 55 minutes.
Serves 6 (3 points per slice)
